WOMEN'S MINISTRY - Recipes

Apple Kuchen: 

1 box yellow cake mix

1/2 cup butter

1/2 coconut

1 20 oz can sliced pie apples

1/2 cup sugar

1 tsp. cinnamon

1 cup sour cream

1 egg

Cut the butter into the dry cake mix until it is crumbly.  Mix in the coconut and pat the mixture into a 13x9 pan, building up the sides slightly.  Bake for 10 minutes at 350 deg.   Arrange the sliced apples on the hot cake.  Mix the sugar and cinnamon and sprinkle over apples.  Then mix the sour cream and egg together and drizzle it over the apples.  (It will not completely cover the cake.)  Bake for 25 minutes or until edges are golden brown.   Serve warm or cold.  Enjoy!

 

ELLEN’S PUMPKIN SQUARES

Line 9 x 13 pan with waxed paper

 Melt 2 sticks butter & cool

 Mix Together:

1 large can pumpkin

1 – 13 oz  can evaporated milk

1 cup sugar

1 tsp cinnamon

3 eggs

 Pour into pan. 

 Sprinkle 1 box of Yellow Cake Mix (dry) on top,

then sprinkle 1 cup chopped pecan nuts. 

Then pour melted butter over all.

 Bake at 350 deg for 1 hour. 

Wait 5 to 10 min & then turn over onto tray. This may be soft but will firm up as it cools.  Top with Cool Whip or whipped cream.

 
TIKI CHICKEN SALAD

1 can of Chicken packed in water *

tsp - Lemon pepper

tsp - Sea salt

3 green onions cut into small pieces. Use the green tops as well.

10 to 15 red or purple seedless grapes cut in half.

Two peppercini peppers chopped, remove the seeds first **

Add a 1/2 tbsp of peppercini juice

One to two tablespoons of mayo (depends on how moist you prefer).

** I buy Mezzetta Deli-Sliced Pepperocini (pickle row at grocer)
